Ham and Cheese Mini Frittatas

  • 1  Can  HAM SHANKS
  • 2  Teaspoons  Black Pepper
  • 1  Pound  Cheddar Cheese, Shredded
  • 3  Cups  Chives, Chopped
  • 2½  Gallons  Liquid Eggs


Preheat oven to 375 F. Mix cheese, HAM SHANKS, chives and black pepper. Fill greased muffin tins half way with mixture, then top off with liquid eggs to just below the rim. Bake 12-15 minutes or until golden brown.

Serving Size: 1 frittata
