
Tuscan Creamy Chicken & Dumpling Soup
Ingredients
- 1 can Vanee Chicken & Dumplings
- 1 pint Heavy Cream
- 3 Tbsp Butter
- 1 Tbsp Olive Oil
- 1 cup Onions, diced
- 1 cup Carrots, diced
- 1 cup Frozen Spinach, chopped
- 1 large clove Garlic, minced
- 1 tsp Salt,
- 1 tsp Dried Thyme
- 1/2 tsp Ground Pepper
Directions
Add the butter and olive oil to a large soup pot over medium heat. Add the onions, celery, and carrots, then sauté 5–8 minutes. Add the garlic and continue to cook for 1–2 minutes, then add the spinach, salt, pepper and thyme. Stir the contents for 1 minute, stir in the cream, place lid on pot and simmer for 15 minutes. Fold the chicken & dumplings into the pot, heat for 10 minutes. Serve.
